  • 500g spinach leaves, washed and chopped

  • 1 tbsp ginger-garlic paste
  • 1 tsp cumin seeds

  • 1/2 cup heavy cream or cashew cream (optional)
  • 2-3 tbsp ghee or oil
  • Salt to taste
Instructions:
  1. Heat ghee or oil in a large pan over medium heat. Add cumin seeds and let them splutter for a few seconds.
  2. Add chopped onions and sauté until they turn translucent. Add ginger-garlic paste and sauté until the raw smell goes away.
  3. Add chopped tomatoes and green chillies (if using). Sauté until the tomatoes become soft and mushy.
  4. Add coriander powder, garam masala, turmeric powder, and red chilli powder (if using). Mix well and sauté for a minute.
  5. Add chopped spinach leaves and mix well. Sauté for a few minutes until the spinach leaves wilt and become soft.
  6. Let the mixture cool down and blend it to a smooth puree.
  7. Heat the same pan over medium heat. Add the spinach puree and bring it to a boil.
  8. Add cubed paneer and mix well. Let it simmer for 5-7 minutes until the paneer is cooked and the gravy thickens.
  9. Add heavy cream or cashew cream (if using) and mix well. Simmer for another 2-3 minutes.
  10. Adjust salt and spices to taste. Serve hot with roti, naan, or rice.

  4. Heat a non-stick pan on medium heat and grease it with a little oil.
  5. Pour a ladleful of the moong dal mixture onto the pan and spread it out evenly to form a thin pancake-like chilla.
  6. Cook for 2-3 minutes on medium heat until the underside turns golden brown and the top begins to dry out.
  7. Flip the chilla and cook the other side for another 2-3 minutes until golden brown.
  8. Remove from the pan and repeat the process with the remaining batter.
  9. Serve hot with your favorite chutney or sauce.

Instructions: 

1. In a bowl, mix gram flour with 1/2 cup water to make a smooth paste. Keep aside.
2. Heat oil in a pan and add cumin seeds. When they start to splutter, add chopped onions and sauté until they turn golden brown.
3. Add ginger-garlic paste and sauté for a minute.
4. Add chopped tomatoes and cook until they turn soft.
5. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a minute.
6. Add the gram flour paste and stir continuously to avoid lumps. Cook for 2-3 minutes.
7. Now put gram flour dumplings too.
8. Add 2 cups of water and mix well. Bring it to a boil and cook for 5-7 minutes on low flame.
9. Garnish with fresh coriander leaves and serve hot with steamed rice or chapati.
