How to make Gagjar ka Halwa

Gajar ka halwa is a popular Indian dessert made with grated carrots, milk, sugar, and ghee (clarified butter). Here's a recipe for making Gajar ka Halwa:

Ingredients:

  • 1 kg grated carrots
  • 1 liter full-fat milk
  • 1 cup sugar
  • 1/2 cup ghee
  • 1/2 cup chopped cashews and almonds
  • 1 tsp cardamom powder

Instructions:

  1. Heat ghee in a heavy-bottomed pan and add the grated carrots. Mix well and cook on medium heat for about 15 minutes, stirring occasionally.
  2. Add milk to the pan and cook on low heat until the milk has been absorbed by the carrots. Keep stirring occasionally to avoid burning the mixture.
  3. Add sugar to the pan and continue cooking on low heat, stirring occasionally, until the sugar has dissolved and the mixture thickens.
  4. Add chopped nuts and cardamom powder to the pan and mix well.
  5. Cook the halwa on low heat for another 10-15 minutes until the ghee starts to separate from the mixture and the halwa turns golden brown in color.
  6. Serve hot or cold, garnished with more chopped nuts if desired.
