How to make Gagjar ka Halwa
- 1 kg grated carrots
- 1 liter full-fat milk
- 1 cup sugar
- 1/2 cup ghee
- 1/2 cup chopped cashews and almonds
- 1 tsp cardamom powder
- Heat ghee in a heavy-bottomed pan and add the grated carrots. Mix well and cook on medium heat for about 15 minutes, stirring occasionally.
- Add milk to the pan and cook on low heat until the milk has been absorbed by the carrots. Keep stirring occasionally to avoid burning the mixture.
- Add sugar to the pan and continue cooking on low heat, stirring occasionally, until the sugar has dissolved and the mixture thickens.
- Add chopped nuts and cardamom powder to the pan and mix well.
- Cook the halwa on low heat for another 10-15 minutes until the ghee starts to separate from the mixture and the halwa turns golden brown in color.
- Serve hot or cold, garnished with more chopped nuts if desired.
