How To Make Delicious Dum Potatoes

Dum potatoes, also known as "dum aloo," is a popular Indian dish that features small potatoes cooked in a rich and flavorful sauce. Here's a recipe for making delicious dum potatoes:

Ingredients:
  • 20-25 small baby potatoes, boiled and peeled
  • 1 cup chopped onion
  • 2 teaspoons ginger-garlic paste
  • 2-3 green chilies, finely chopped
  • 1 cup tomato puree
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • 1/2 cup curd (yogurt)
  • Salt to taste
  • 2 tablespoons oil
  • 2 tablespoons chopped fresh coriander leaves
Instructions:

  1. In a pan, heat oil over medium heat. Add chopped onions and sauté until they turn translucent.
  2. Add ginger-garlic paste and green chilies to the pan and sauté for a minute.
  3. Add tomato puree to the pan and mix well. Cook the mixture for 5-6 minutes.
  4. Add turmeric powder, red chili powder, cumin powder, coriander powder, and garam masala powder to the pan. Mix well.
  5. Add boiled potatoes to the pan and mix them with the masala. Cook for 2-3 minutes.
  6. Add curd to the pan and mix well. Add salt to taste and cook for another 2-3 minutes.
  7. Add 1-2 cups of water to the pan, depending on how thick you want the gravy to be. Mix well and bring it to a boil.
  8. Once the gravy starts boiling, cover the pan with a tight lid and cook on low heat for 10-15 minutes. This process is known as "dum" cooking and helps to infuse the potatoes with the flavors of the masala.
  9. After 10-15 minutes, remove the lid and check if the potatoes are cooked through and the gravy has thickened. If the gravy is too thick, add a little more water and cook for a few more minutes.
  10. Garnish with chopped coriander leaves and serve hot with rice or naan bread.
