Dum potatoes, also known as "dum aloo," is a popular Indian dish that features small potatoes cooked in a rich and flavorful sauce. Here's a recipe for making delicious dum potatoes:
- 20-25 small baby potatoes, boiled and peeled
- 1 cup chopped onion
- 2 teaspoons ginger-garlic paste
- 2-3 green chilies, finely chopped
- 1 cup tomato puree
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- 1/2 cup curd (yogurt)
- Salt to taste
- 2 tablespoons oil
- 2 tablespoons chopped fresh coriander leaves
Instructions:
- In a pan, heat oil over medium heat. Add chopped onions and sauté until they turn translucent.
- Add ginger-garlic paste and green chilies to the pan and sauté for a minute.
- Add tomato puree to the pan and mix well. Cook the mixture for 5-6 minutes.
- Add turmeric powder, red chili powder, cumin powder, coriander powder, and garam masala powder to the pan. Mix well.
- Add boiled potatoes to the pan and mix them with the masala. Cook for 2-3 minutes.
- Add curd to the pan and mix well. Add salt to taste and cook for another 2-3 minutes.
- Add 1-2 cups of water to the pan, depending on how thick you want the gravy to be. Mix well and bring it to a boil.
- Once the gravy starts boiling, cover the pan with a tight lid and cook on low heat for 10-15 minutes. This process is known as "dum" cooking and helps to infuse the potatoes with the flavors of the masala.
- After 10-15 minutes, remove the lid and check if the potatoes are cooked through and the gravy has thickened. If the gravy is too thick, add a little more water and cook for a few more minutes.
- Garnish with chopped coriander leaves and serve hot with rice or naan bread.
