Oats Upma
- 1/2 cup rolled oats
- 1/2 cup water
- 1/4 cup chopped onion
- 1/4 cup chopped tomatoes
- 1/4 cup chopped bell pepper
- 1 green chili, finely chopped
- 1 tsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp urad dal (split black gram)
- 1/2 tsp chana dal (split chickpeas)
- Salt to taste
- Coriander leaves for garnish
- Dry roast the oats in a pan for 2-3 minutes until they turn slightly brown. Keep aside.
- Heat oil in the same pan and add mustard seeds. When they start to splutter, add cumin seeds, urad dal, and chana dal. Sauté for a minute.
- Add onion and green chili and sauté until onion turns translucent.
- Add tomatoes, bell pepper, and salt. Cook for 2-3 minutes until the veggies turn slightly soft.
- Add the roasted oats and mix well. Add water and cover the pan. Let it cook for 2-3 minutes on medium-low heat.
- Turn off the heat and let it sit for a minute.
- Garnish with coriander leaves and serve hot.
