- 2 eggs
- 1/4 cup chopped mixed vegetables (onions, bell peppers, mushrooms, etc.)
- 1/2 tsp oil
- Salt and pepper to tastejh
- In a bowl, whisk together the eggs, salt, and pepper.
- Heat oil in a non-stick pan over medium heat.
- Add the chopped vegetables and sauté for 2-3 minutes or until tender.
- Pour the egg mixture over the vegetables and cook for 2-3 minutes or until the bottom is set.
- Carefully flip the omelette over and cook for an additional 1-2 minutes or until fully cooked.
- Serve hot with a side of sliced tomatoes or a small bowl of mixed fruit.
