Ingredients:

For the marinade:

  • 1 pound boneless, skinless chicken thighs, cut into bite-size pieces
  • 1/2 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon salt

For the sauce:

  • 4 tablespoons unsalted butter
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 teaspoons grated fresh ginger
  • 1 tablespoon tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
Instructions:


  1. In a large bowl, mix together the yogurt, lemon juice, cumin, coriander, garam masala, turmeric, paprika, and salt. Add the chicken pieces and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to overnight.
  2. Preheat the oven to 400°F. Place the chicken on a baking sheet lined with parchment paper and bake for 20-25 minutes or until the chicken is cooked through.
  3. While the chicken is cooking, heat the butter in a large skillet over medium heat. Add the onion and cook until soft and translucent, about 5 minutes. Add the garlic and ginger and cook for another minute.
  4. Add the tomato paste and stir to combine. Pour in the crushed tomatoes and bring the mixture to a simmer. Cook for 10-15 minutes or until the sauce has thickened slightly.
  5. Remove the skillet from the heat and use an immersion blender or transfer the mixture to a blender to puree the sauce until smooth.
  6. Return the skillet to the heat and stir in the heavy cream. Bring the mixture to a simmer and cook for another 5 minutes.
  7. Add the cooked chicken to the skillet and stir to coat in the sauce. Cook for another 5-10 minutes or until the chicken is heated through.
  8. Season with salt and pepper to taste. Garnish with chopped cilantro and serve with rice or naan bread.

Ingredients:

  • 2 cups whole wheat flour
  • 1 cup mashed potatoes
  • 1/2 tsp cumin seeds
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/2 tsp coriander powder
  • 1/4 tsp turmeric powder
  • Salt, to taste
  • Water, as needed
  • Ghee or oil, for cooking
Instructions:

  1. In a large bowl, mix the flour, salt, and enough water to make a soft dough. Knead the dough for a few minutes until it is smooth and elastic. Cover the dough and let it rest for at least 10-15 minutes.
  2. In a separate bowl, mix the mashed potatoes, cumin seeds, red chili powder, garam masala, coriander powder, turmeric powder, and salt.
  3. Divide the dough into equal-sized balls. Roll out each ball into a small circle using a rolling pin.
  4. Place a spoonful of the potato filling in the center of the dough circle. Bring the edges of the dough together and seal the filling inside. Flatten the ball slightly.
  5. Dust the stuffed ball with some flour and roll it out gently into a circle, around 6-7 inches in diameter.
  6. Heat a tawa or griddle on medium heat. Place the rolled-out paratha on the hot griddle. Cook for a minute or until the surface starts to bubble.
  7. Flip the paratha over and cook for another minute. Spread some ghee or oil on the surface and flip again. Cook until both sides are golden brown.
  8. Repeat the process with the remaining dough and filling to make more parathas.
  9. Serve hot with some yogurt, pickle, or chutney.

  • 2 tbsp vegetable oil
  • 3/4 cup warm water
  • additional flour for dusting

Instructions:

  1. In a mixing bowl, combine the flour, salt, and sugar.
  2. Add the vegetable oil and mix until the flour mixture is crumbly.
  3. Gradually add the warm water and mix until the dough comes together.
  4. Knead the dough for about 5-10 minutes until it is smooth and elastic.
  5. Cover the dough with a damp cloth and let it rest for at least 15 minutes.
  6. Divide the dough into equal-sized balls, about 1 1/2 inches in diameter.
  7. Roll out each ball into a flat disc about 1/4 inch thick.
  8. Heat a skillet or a tawa over medium-high heat.
  9. Place one paratha on the hot skillet and cook for about 30 seconds.
  10. Flip the paratha over and brush some oil on top.
  11. Cook for another 30 seconds, then flip the paratha again and brush oil on the other side.
  12. Continue cooking and flipping the paratha until it is golden brown on both sides and cooked through.
  13. Repeat the process with the remaining parathas.

Note: - To make stuffed parathas, simply place the desired filling (such as spiced potatoes or cheese) in the center of the rolled-out dough, then fold the dough around the filling and roll out again before cooking on the skillet.

Ingredients

  • 1 cup mixed lentils (moong dal, toor dal, chana dal, urad dal, masoor dal)
  • 3 cups water
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 2 tablespoons ghee or oil
  • Salt to taste
  • Chopped coriander leaves for garnish

Instructions:

  1. Rinse the mixed lentils in water until the water runs clear. Soak them in water for about 30 minutes.
  2. In a pressure cooker or a large pot, add the soaked lentils, water, turmeric powder, and salt. Mix well.
  3. Pressure cook the lentils for about 3 to 4 whistles or until the lentils are soft and mushy. If using a pot, cook the lentils for about 30 to 40 minutes or until they are soft and cooked.
  4. In a pan, heat ghee or oil. Add cumin seeds and let them splutter. Add coriander powder, red chili powder, and garam masala. Fry for a few seconds until fragrant.
  5. Add the cooked lentils to the pan with the spices. Mix well and let it simmer for 5 to 10 minutes on low heat.
  6. Adjust salt and spices to taste. Garnish with chopped coriander leaves.  
Serve hot with rice or roti.
